Love the Indonesian food reference! I wrote about this topic on my newsletter a year ago. As an Indonesian, I didn’t know what rijsttafel is until I moved here and learned that it’s introduced by the Dutch to showcase Indonesia’s spices. Whether it’s authentic or not, it comes down to what even is authenticity in food. But it’s here to stay and shows the complex history through the unending parade of plates!
On another note, please try Paon in Amsterdam! Party in your mouth is guaranteed ;)
Proper Indo has been my go to, but tonight I just tried Paon Bali on KNSM/Java eiland and it was excellent. There’s only one set menu— it changes daily. It’s posted every week on IG
Betawi is our local - very informal and a little rough around the edges but not too far off from the real deal and maaaassive portions. Bring cash though!!
Toko Bersama on Bilderdijkstraat is really good too. You're a noodle soup man so I'd be remiss not to mention that their soto ayam is pretty phenomenal (I think you can ask for noodles in it and defs sambal on the side).
But I'm still looking for THE ONE, so keep us posted!
I’m here for the restaurant tips: I moved here almost exactly a year ago and am still struggling to find That Spot. You know, the place you go on a Wednesday night when you can’t be bothered to cook but also didn’t make a reservation and don’t want to spend 100€pp. a consistently good restaurant (The closest I’ve gotten is Pazzi, which has good pizza and excellent Negronis and hardly ever a wait) is elusive!
If you go to The Hague, you should try Waroeng Padang Lapek. Its spice levels are next level but it’s the best Indonesian I’ve had in the country (agreed on proper indo food being the best in Amsterdam)

The Indonesian food in the Hague is very good! I would say Pempek Elysha is excellent. Lapek (mentioned in another comment) is also great!

Have you been to Pizza Project on Wilheminstraat? I think it has that kind of vibe!
